Ingredients:
- Beetroot , cubed : 1 Cup
- Pomegranate : ½ Cup
- Eggplant, Cubed and fried : ½ Cup
- Parsley leaves, finely chopped : 1 Cup
- Vinegar : 1 tbsp
- Olive oil : 2 tbsp
- Mix beetroot, pomegranate and eggplant and season with vinegar and olive oil.
- Serve garnished with chopped parsley leaves.
